Fresh Tomatoes!
Recipe for Stuffed BLT Tomatoes
Serves 4
Ingredients:
4 Heirloom or other Large Tomatoes
2 Fresh Large Avocados
Fresh Lettuce
8 Slices Crispy baked Bacon (Pork or Turkey)
Lime juice
Salt & Pepper
Directions:
Halve the tomatoes and scoop out the center to create a cup. Keep the scooped-out tomatoes to use in a salsa or sauce. Sprinkle the tomatoes with a little salt and pepper.Cut the avocados in half (around the pits, top to bottom). Twist the halves apart and remove the pits. With a sharp knife, carefully score the avocados into a dice inside the skin. Use a large spoon and scoop out the diced avocado into a large mixing bowl. Discard or compost the skins/shells.
Shred some fresh lettuce (about half a cup for each tomato) and add to the bowl with the avocado.
Dice the cooked bacon and add to the bowl with the avocado.
Stir all together and season with lime juice and salt and pepper to taste.
Spoon the avocado, lettuce, bacon mixture into the halved tomatoes and serve!
